Trattoria Roberto

This project begins as a dream of many, in August 2013 he begins project, to break walls and renovate a house hidden among trees, went to modify plans from a simple pizzeria to a fit restaurant, you did not want something simple or common to our hometown, we wanted something innovative, special, welcoming, that we could delight our guests with something special.
With the base of the pizzas we decided that it could be something more, Italian dishes and it was like that Trattoria Roberto arrived.


The varieties of grapes produced in Mexico are, for red wines: Barbera, Cabernet Franc, Cabernet Sauvignon, Claret, Grenache, Merlot, Misión Nebbiolo, Petite Sirah, Ruby Cabernet, Tempranillo y Zinfandel. For white wines: Chardonnay, Chenin Blanc, Fumé Blanc, French Colombard, Sauvignon Blanc and Semillion.


The barrel, which is also usually called a vat or cask, oxygenates the wine and transfers some nuances to it or others depending on the wood chosen. The choice of this is a decision made by the winemaker, since it is decisive in the type of wine he wants to make.


The temperature at which a wine should be taken is not a whim: it is very important to make the most of the properties and characteristics of each wine and to get the best out of each wine being taken at the correct temperature ... which varies greatly depending on the type of wine.
